Scientists have established a connection between the consumption of leafy green vegetables, such as spinach, kale, and broccoli, and enhanced lung health.

Understanding Vitamin K and Respiratory Health

Vitamin K exists primarily in two forms within foods. Vitamin K1 is predominantly found in vegetables and plays a crucial role in the body’s blood-clotting mechanisms. In contrast, vitamin K2 is present in fermented foods, certain dairy items, eggs, and meats, contributing to calcium regulation and supporting bone health.

Researchers at Australia's Edith Cowan University undertook an investigation into whether dietary intake of these two vitamin K forms was linked to chronic obstructive pulmonary disease (COPD), asthma, and overall lung function.

As outlined in the introduction to their study, published in The American Journal of Clinical Nutrition, chronic respiratory conditions, including COPD and asthma, rank among the most widespread noncommunicable diseases globally. In 2019, these conditions were the third leading cause of death, responsible for 4 million fatalities and affecting 454.6 million individuals worldwide.

The scientists further noted that while asthma and COPD can be managed through existing treatments, neither condition offers a cure, highlighting the critical need for effective preventive strategies. The Mayo Clinic identifies smoking as the leading cause of COPD, with exposure to other irritants like dust, chemicals, and pollution also contributing factors.

Key Findings from the Australian Study

The research team analyzed data from 179,062 participants over a period spanning 10 and a half years. Their findings led them to conclude that a higher dietary intake of vitamin K1 was associated with improved lung function and a reduced incidence of COPD.

Specifically, participants with the highest consumption of vitamin K1 exhibited a 16% lower probability of developing COPD. These beneficial effects were observed to be more pronounced among individuals who smoked and those employed in high-risk occupations.

Conversely, the study found no evidence that the consumption of vitamin K2 resulted in lower rates of COPD. Furthermore, the researchers reported that no association was observed between the intake of either vitamin K1 or vitamin K2 and asthma.

Associate Professor Marc Sim, a member of the study team, suggested a potential mechanism: vitamin K may activate a protein that contributes to maintaining the flexibility of lung tissue and helps prevent damage.

Dietary Recommendations and Study Limitations

It is important to note that because this was an observational study, it can only demonstrate an association between higher vitamin K1 intake and better lung health, rather than proving that vitamin K1 directly causes a reduction in COPD risk.

Chengfeng Li, one of the study’s researchers, commented that incorporating just one additional serving of leafy greens into one's diet represents an achievable method to boost vitamin K1 intake. Beyond spinach, kale, and broccoli, other foods rich in vitamin K1 include collard greens, Swiss chard, Brussels sprouts, and turnip greens.
